I've put my "tweaked" version of the Parad*ise Bake*ry sugar cookie recipe over at KnightsInTheKitchen . If you like a good sugar cookie but not all the work of rolling and cutting them out...this is the recipe for you. I ended up drizzling/piping mine with a thin chocolate icing and I also posted that recipe. I'd love to hear from you if you try this.

This post inspired my to dust off a similar recipe. Mine calls for oil as well as butter. Seems weird in a cookie recipe but they make a nice big, soft cookie. Like you, I enjoy the simplicity of not having to roll out the dough. Happy baking!
