One of many things I admired about my mom was she tried out new recipes on a regular basis. Mom was a really good cook (and Dad wasn't anything to sniff at - he worked in a bakery at the Seventh-day Adventist Academy in Auburn, Washington while attending school there as a boy). I have the best intentions to cook and bake when I clip new, tantalizing recipes from magazines, copy some off the internet ...and then let them collect....just collect. Well most of them collect, I do try a few. Little stacks of recipe papers accumulate on my desk or on top of my cookbook self. Sometimes I do blow the dust off them - I have standards you know. Well, yesterday I found a tantalizer on another blog. If I were knowledgeable I would direct you to that blog but I'm sorry I haven't figured that out yet. Trying to improve my performance, I copied the recipe, tucked it in my purse and then purchased the ingredients today and made it for dinner tonight. SLK gave it a thumbs up and is taking the left-overs to work tomorrow for lunch. I know... (can't you just hear "Cybil" from Fawlty Towers saying that) you say he doesn't like/eat left-overs. What does that tell you about this recipe. P.S. Oh how we all adored Fawlty Towers!!
Caribbean Chicken and Black Bean Salad
with Spicy Lime dressing (below)
2 c. cubed, cooked chicken
¼ c. chopped fresh cilantro
1 large tomato, chopped (1 cup)
1 medium avocado, diced
1 small yellow squash, chopped (Wally's was OUT!! I substituted cucumber)
1 can (15 oz.) black beans, rinsed and drained
Leaf lettuce
* Make Spicy Lime dressing
* Toss salad ingredients except lettuce in large bowl. Pour dressing over salad; toss. Serve on lettuce.
Spicy Lime Dressing
¼ c. lime juice
¼ t. ground cumin
¼ t. salt
½ t. chili powder (I used chipotle chili powder for the smokey flavor only 1/4 t. due to heat)
2 T. olive oil
1 T. honey
2 to 3 drops red pepper sauce (I spaced putting in this ingredient & it was fine)
* Shake all ingredients in tightly covered container.
Here's the next recipe I want to try next. I'll return and report (I love that concept!!!)
