Salivating!!!



Somewhere in my twenties I decided to try making a new (to me) dish.  Boiled corned beef, cabbage and potatoes.  I think I was trying to serve it for St. Patricks Day family dinner.  I do not recall Mom ever making this; do you sisters?

It has been a BIG HIT ever since. 

There are some foods that are just not really visually appealing to me and this is one.  But oh, give it a try.  Please.

Run out to your grocery store...corned beef is so on sale this week.  A package of c.b. will last for weeks in the refrigerator.  And yes, cabbage is also on sale.

It all boils in one large pot.  So  easy.

And boiled cabbage as a treat????  Just ask Dori.

Follow directions on the c.b. package.  You'll need a big pot for when you add the cabbage.  We never add the carrots or onions.  We're simple folks.

You'll want mega leftovers!!!

In later years I also started baking Irish Soda Bread to go along with this meal.  You can find my recipe for that at Knights In The Kitchen. Just click on breads on the side board and you'll find it down about 3 recipes.

Boiled cabbage IS a treat and I wuv it!!!! I love it so much that after I've already boiled one head of cabbage with the corned beef and potatoes, I save the corned beef "juice" and boil 2 or 3 more heads of cabbage. Take your Beano before you eat this, do us all a favor, but please, please, please, try making it! It's fun!!

I think the last time I had this yummy dinner was St. Patty's Day at Jody's house. I wish I'd made it this year.
