In my own way I will celebrate Cinco de Mayo today. I have to be honest and say I do not know much about the Mexican Independence celebration.

If I ever "throw" a Cinco party I'll use this clever idea of putting sliced Bell peps in the vase surrounding large sunflowers.
I love, love, love Mexican food and guacamole. . . . . . and anything on the menu at this delicious restaurant. You out-of-towners, I'm taking you here when you get down here. Try not to make me wait too long!!!
Well, maybe the way I'll celebrate is making a batch of our family recipe of salsa. This photo is not my recipe, I don't put red (silly, purple) onion in mine.

Fresh Salsa
Place in food processor:
2-4 peeled garlic cloves and process until minced
Add to processor:
1 bunch cleaned green onions with root ends trimmed, process until chopped
Add to processor:
1/2 - 1 bunch cleaned cilantro with stems removed; process until chopped
Remove above from processor and place in mixing bowl
Place in processor:
6-8 tomatoes cleaned, trimmed & quartered. Actually do this in 3-4 batches chopping to desired size.
Add all to bowl and mix well:
1 small can mild chiles, I like flavor but not heat
1 ripe, diced avocado
salt to taste

Must confess... Went through Sam's Club and sampled Cinco de Mayo food last week and bought it all for tonight.
We are having Jimmy Buffett's Margaritaville SWEET salsa with pepper jack cheese, guacamole and chicken rolled up in 1/2 of a flour tortilla.... and chasing it down with virgin orange margaritas.

I just make mine a little different, that's all :) A little extra garlic, a little extra cilantro, and I have a little prep work with my tomatoes (gotta buy some that are super rock hard and a few juicy bad boys...and then get rid of most of the juice...no soggy salsa for me!!)

Mexican independence is not May 5th. Cinco De Mayo is the battle of Puebla. Not celebrated in Mexico. Words shared by Elder Ben. I just planted 4 kinds of tomatoes so we can make salsa when you come! Hugs
I don't care for cilantro as you know (but Jess loves it so we have it on the side or I just take mine out before adding it) and I like to add white vinegar to mine. Also I have to admit that I do like soggy salsa. I drain it for Jesse. Not liking soggy salsa must run in ya'll family.

Aunt Sue, I love, love, love your salsa! I miss your salsa! I've tried to make your salsa but it didn't taste as good - it must be the chef.
